Local chefs step forward to help fulfill Albuquerque man's bucket list
He's a madman. Brent Dodson. Sands has spent the last months in and out of hospice care dealing with a variety of health issues, and it's taken a toll on both he and his family. Really overwhelming, honestly, Friend's wife, Nicole, says the two were watching a cooking show and someone was preparing beef. Wellington Brent had never had it, so Nicole took to Facebook to see if any chef was familiar with the dish. This is the catalog beef, right? That's when Hotel Andaluz, executive chef Mark Kenyans, stepped up. Just being able to be in a position to do something this special and and this important it's very emotional and humbling. It makes life stresses, you know, seems so insignificant. He prepared the delicious dish and delivered it Saturday to the family. That's awesome, Nicole says. The meal hit the spot both in their stomachs and in their hearts. It feels very lonely. And so to have so many people from the community be like we want to do this for you. A man on hospice, a bucket list, a Facebook post and a Beef Wellington. At the end of March, Nicole Dodson-Sands posted to the Facebook group, Burque Take Out & Curbside Food Service, with a request. “My husband is on hospice and slowly working his way through a bucket list. He has never had Beef Wellington but has seen it on 'Hell’s Kitchen.' He really really wants to try it. So where can I pick him up a good authentic beef Wellington?” That’s when a local chef stepped forward. Marc Quiñones, the Executive Chef at Hotel Andaluz, replied to the thread saying he’d be honored to prepare the dish for Nicole’s husband, Brent. “Just to be in a position to do something this special and this important, it's very emotional and humbling. It makes life's stresses seem so insignificant,” Quiñones told KOAT. He prepared the beef Wellington for the Dodson-Sands family and delivered it to them this past week. Nicole tells KOAT the dish and the sentiment hit the spot. “It feels very lonely and to have so many people from the community be like 'we want to do this for you, we wanna help your family, we wanna do this--' it does not feel lonely,” Nicole tells us. Brent agrees, “It’s been really nice.”The local love didn’t stop there either, The Q Cakes Cake Lady owner also stopped by with a special treat, a six layer-coconut cream cake.
